The La Vecchia Dispensa story began four generations ago, when the families Pelloni and Tintori started aging Balsamic Vinegar in precious wooden casks. It is their pride and honour to give credit to the work of previous generations, preserve and pass it on to the future ones. All care is taken in the characteristics of their product, right down to the tiniest detail. Sometimes this may seem superfluous or even obsessive but for them every piece is unique and deserves all their attention starting with the selection of the raw materials right through to the packaging of the finished product. Each product is a representation and can tell a story about them, their history and the family.

La Vecchia Dispensa Organic Balsamic Vinegar 10 Years of Modena IGP has a fine flavoured character with a well-balanced bouquet of precious wood essences, a well-balanced intense acidity, and aftertaste of red fruits and fresh must. It has a density of 1.22 Kg/Lt and is ideal as is for cold or hot dishes. Excellent for cooked veggies and mushrooms. Allow a tablespoon of this vinegar to evaporate in the pan when meat or fish is cooked; mixed to prepare sauces for boiled meat; drizzle over sweet or vegetable omelettes; works great on meats if you would like to degrease the taste.
