According to great Italian chefs, vincotto is an elixir, sweet, velvety vinegar, with the subtle overtones of spices, grapes and prunes. The Calogiuri family has produced vincotto since 1825 using a closely guarded traditional recipe. This recipe is now available commercially through the dedicated effort of Gianni Calogiuri, the latest generation of the Calogiuri family. Full bodied, sweet and sour. Vincotto is aged for four years before being bottled and sold the world over.

Drizzle over roasted meats, fruit salads, ice cream, panna cotta, zabaglione, chocolate, even desserts and cocktails. Grilled meats and game take on a richer flavour with a little orange vincotto. To end a meal, a few drops will give a sweet tang to vanilla ice cream, fresh grilled peaches or pears. A teaspoonful mixed into strained yogurt, fruit and chopped almonds makes a healthful, refreshing dessert.
