Verjus or ‘green juice’ is the tart fresh juice made by pressing unripe grapes. The tiny hard green berries are pressed when there is an overabundance of fruit on the vines. Although popularised recently, it is not a new ingredient. It has been used since the middle ages, in many different cuisines in place of wine or vinegar. When used in dressings, its sour notes compliment wines in a way that lemon or vinegar cannot. It works particularly well with oils such as walnut, sesame and hazelnut. This verjus is a clear water like juice, making it even more versatile.
