Jeffa has been making cheese since 1979, and was one of the first people in Ireland to go back to making cheese on the farm. She is assisted in production by Ann McGrath and recently welcomed daughter Sarah into the business.

Durrus is a semi soft, washed rind cheese. It is often plump, pink and pliable with a mild and buttery flavour. At the other end of the spectrum we find cheeses that are firmer, with an earthier flavour and a darker rind.

Durrus is made all year round. Jeffa buys in milk from two local farms, one in the summer and the other in the winter. In Ireland many farms do not produce milk in the winter. As a result, many cheesemakers who want to produce cheese all year round must buy their milk from a different farm in the winter. Jeffa has been working for over 25 years with two local farmers on the Sheep’s Head Peninsula. The cheese is made using raw milk from one farmer in the summer and pasteurised from another all year round.
