Description:
The Old Telegraph Road range is Jindi’s limited release range of cheeses made especially for hotels, restaurants and selected independent gourmet delis. The cheeses are created with passion and carefully aged, to be released for sale only when ripe and ready to serve.

The red rind on OTR Fire Engine Red Washed Rind is a result of the regular washing with Brevibacterium linens; the washing contributes to the strong and at times over powering aromas of this cheese. Its flavour characteristics will include caramel, cauliflower and cabbage, and displays a soft silky texture on the tongue.

Fire Engine Red is named in honour of the fire engines and the firemen who fought tirelessly to defend the Jindi factory during the Black Saturday Bushfires in Feb 2009.
