During the first 3 months of its development, the rind of this cow’s milk cheese is washed using a light brine solution, this encourages the growth of the Brevi Bacterium covering its rind. When the cheese has matured, Jensen’s Red has its trademark sticky-orange, stinky-aromatic rind. The texture of the interior is soft and supple with a well balanced creamy full rounded flavour on the palate.
