This quiet achiever hits the mark on all aspects of flavour and a broad spectrum of applications.
Made from fresh cows milk in the French Comte region this beautiful cheese is similar to a Clarines but in a much larger format. The light washed rind on it is subtle as the cheese still presents as a white mould. The interior is glossy and creamy with a lovely earthy profile which is perfectly balanced with a mild sweet flavour of pine infused from the shelving the cheeses are matured on.
Once the cheese has reached its optimum affinage, small grey and black spots will bloom on the surface which will not affect the flavour of the cheese but will give an indication that the cheese is at its peak. This cheese is an absolute crowd pleaser and the perfect centerpiece on any cheese board.
