Description:
The Old Telegraph Road range is Jindi’s limited release range of cheeses made especially for the hotels, restaurants and selected independent gourmet delis. The cheeses are created with passion and carefully aged, to only be released for sale when ripe and ready to serve.
Similar to the traditionally made Brie’s of France, OTR Brie comes in a large 40cm round format. The cheese has a balanced appearance with a subtle aroma of mould and earthiness. As the cheese ages the velvety white mould begins to develop reddish brown patches, this is an indication that the interior is nearing its best. The interior has a smooth texture and a rich earthy, mushroomy aroma that continues to develop as the cheese ages. Particular note should be made of the mouth feel of OTR Brie as it leaves the palate with subtle, lingering flavours rather than a fatty and clawry texture.
