Another winner from the famous Woodside Cheesewrights. Capricorn is a surface ripened white mould which ripens from the outside to the inside until the beautiful white pate is completely broken down. This cheese has a clean and fresh citric flavour, combining well with the mushroomy influence of the white mould. Serve Capricorn at room temperature on a cheese platter with a good pinot noir or sauvignon blanc.
