Edith is a quite firm table cheese when young & has a grainy texture. The flavour is delicate, creamy, with a slightly acidic “sweet & sour” centre. It has an outer layer of white mould, which is rolled in ash from Petaluma grape vines. The white mould produces more complex flavours as the cheese ages and the ash helps to protect the product from drying out, along with the aesthetics of a fantastic black colour. As Edith matures it becomes softer and stronger in flavour.

Over a couple of months, the mould begins to grow through the ash and produces a marbled look to the outer surface. This also breaks down the composition of the cheese resulting in a velvet soft interior that melts in your mouth leaving a concentrated goat flavour. As with the famous French goat cheeses, they can be eaten at various stages of their lives with the flavours & structure changing dramatically from fresh & mild to strong & very hard.
