This perfectly formed cylinder is caught in the early stages of the blooming of white mould. The candidums impart a sweet earthiness against delicate acidity of the pate. After 10 days ripening, its rind is naturally covered in cream coloured flora. Its tender, unpressed, and uncooked paste becomes even textured and smooth.Virgo is perfect for cheeseboards.
